Avocado Toast -- A plant-based treat!


Who doesn’t love a good avocado toast? It’s got the textures and flavors that satisfy for breakfast, lunch or a quick snack. The toast is so easy to make and, because they’re so many topping options, it never gets tired.


Avocado toast makes just about the perfect plant-based meal. Try on these variations!



Avocado Toast with Pesto, Ricotta and Charred Tomatoes

Ingredients:

  • 2 slices hearty bread (I like Dave’s Killer 21 Whole Grains and Seeds)

  • 1 avocado

  • ¼ cup plant-based ricotta (I like Kite Hill)

  • 2 Tablespoons plant-based pesto ( I like Trader Joe’s Kale, Cashew & Basil pesto)

  • 10 grape tomatoes

Directions

1. Place the grape tomatoes on a sheet pan, season to taste and place directly under the broiler for 1-3 minutes (shake the pan occasionally during cooking). Allow them to blister and pop.

2. Mash the avocado and season with salt and pepper to taste.

3. Stir the ricotta together with a little salt and pepper to taste.

4. Toast the bread.

5. Assemble the toast by spreading the avocado mixture on each slice. Add a dollop (about 2 tablespoons) of the ricotta mixture, then 1 tablespoon of the pesto. Top with the blistered tomatoes.

Avocado Tempeh Toast

Ingredients

  • 2 slices hearty bread (I like Dave’s Killer 21 Whole Grains and Seeds)

  • 1 avocado

  • Juice from ½ lemon

  • 4 slices Lightlife Organic Smoky Tempeh Strips Fakin' Bacon (or another tempeh product)

Directions

1. Mash the avocado with lemon juice. Add salt and pepper to taste.

2. Cook the tempeh in a pan over medium heat according to package directions.

3. Toast the bread.

4. Assemble: Spread half of the avocado mixture on each slice of bread. Top with the cooked tempeh.

5. For bonus greens and crunch, add some shredded lettuce or baby spinach!


Garden Avocado Toast

Ingredients

  • 2 slices bread (I like Dave’s Killer 21 Whole Grains and Seeds)

  • 1 avocado

  • Juice of ½ lemon

  • 3 basil leaves, torn by hand

  • 1 tablespoon fresh cilantro, chopped

  • 2 Tablespoons shredded carrot

  • 10 grape tomatoes, halved

  • ¼ of a cucumber, thinly sliced, sliced radishes, thin slices of red onion

Directions

1. Mash the avocado with the lemon juice. Season with salt and pepper. Stir in the chopped herbs.

2. Toast the bread

3.Assemble: Spread half of the avocado mixture on each slice of bread. Top with the shredded carrot, slices of tomatoes, slices of cucumber, radishes and red onion. Add a final scant sprinkle of salt. Enjoy!
